 A rousingly good show today.  Thank you for joining us.  Lots of good questions.

A little more involved with the menu tonight but here it is...

Meatloaf Wrapped in Bacon 
Served with "Pond Water" Cocktail and Mixed Green Salad

Ingredients
1/2 cup olive oil
1 cup chopped yellow onions
1 cup chopped celery
1 cup chopped carrots
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper

1 teaspoon chopped sage
1 teaspoon chopped oregano
1 teaspoon chopped rosemary
3 tablespoons Worcestershire sauce
1 cup loosely grated parmesan cheese
1/2 cup beef stock
1 cup sourdough bread crumbs
2 extra-large eggs, beaten

Meat
1 pound ground chuck (80/20)
1 pound chorizo
1/2 pound ground turkey

Topping
2/3 cup ketchup
2 teaspoons of smoke flavoring
1/2 cup brown sugar

1.5 pounds bacon


Instructions
Preheat the oven to 425 degrees F.

Heat the olive oil in a sauté pan. Add the celery, carrots, onions, thyme, salt, and pepper and cook over medium heat until the onions et al are translucent and only slightly browned. take off heat and set aside.

When cool-ish, add to large mixing bowl with Worcestershire sauce, beef stock, red onion, sage, oregano, rosemary and bread crumbs, and mix gently. Add ground chuck, chorizo, ground turkey and eggs.
Mixing gently with fingers, pulling meat apart and tossing everything together, combine. Don't squeeze or mash down or it ruins everything.

On a rimmed baking sheet covered with parchment, shape gently combined mixture into a rectangular loaf. Gently form a 1" rim around the top.

Mix ketchup, smoke and brown sugar and spread 1/2 of the mix evenly on top of the loaf, inside the rim you created.  

Weave the bacon over and around the loaf.

Spread the rest of the topping mix over the bacon, spreading evenly.

Reduce heat to 375° and bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through.

Serve hot, with a mix greens salad with a lemon, olive oil and pomegranate balsamic vinegar dressing.

Cocktail
Pond Water - an adventuresome mix of
.5 oz. of Corbin Cash Sweet Potato Liqueur
.5 oz. of The King's Ginger
.5 oz. of Fernet (Throw Back)
1.5 oz lemonade
Shake vigorously with ice
Pour over ice in a beautiful glass
Juice from 1/2 lemon
