Italian Sausage with Cauliflower Florets,
Fennel and Onion and a Yogurt Sauce
Prepare the right number of mild and sweet Italian sausages by slathering them in olive oil and arranging them on a rimmed baking sheet (on parchment is the way I do it).
Prepare cauliflower florets, fennel and sweet onion on another parchment-covered rimmed baking sheet, drizzle with olive oil, salt and pepper and beginning roasting at 425°.
When they've been roasting for 10 minutes, have the sausages join the veggies in the oven and cook together for another 25 minutes or longer - flipping the sausages over 1/2 way through - until the sausages are cooked through and the cauliflower is lightly browned.
The Sauce Boss!
While those are all in the oven, mix Greek yogurt, a bit of Dijon mustard, lemon juice, capers, salt and pepper together to make a wonderfully complementary sauce that will round out all the flavor layers.
